Cass Vineyards and Winery is located in the rolling, oak-studded hills between Paso Robes and Creston on California’s beautiful Central Coast. This area that the vineyard calls home offers quiet serenity for the visitor and a perfect growing season for wine grapes. A unique feature of Cass wine making is that all of the Rhone grapes they grow are ENTAV certified. ENTAV (Establissement National Technique pour l’Amelioration de la Viticulture) is the national agency of France responsible for the quality of wine grape varieities. Over 90% of all French Vineyards are started with ENTAV certified plants and are only recently available in California. Consequently, these are among the very first wines made from ENTAV grapes grown in the U.S.
2004 Cabernet Sauvignon $39.88![]()
This Cab is blended with 25% Cabernet Franc. In our blending trials we noticed that the Cab Franc really helped bring out the nose of the wine. This wine has notes of macerated cherries, fresh pencil shavings, and new unsmoked cigars. Drink this wine with standing rib roast of beef, crusty pan seared Rib-eye steak, or glazed beef with Bourbon-Roquefort sauce.
Planted to several exciting new ENTAV* clones originating from France, our fledgling Syrah vines produced a paltry 100 pounds of fruit per acre. Anticipating a wine of bold intensity from these low yielding blocks, we opted to ferment in small bins, manually punching-down the cap, to fully extract color and character from the skins. The resulting wine is deeply pigmented, with fresh berry flavors and unique nuances of white pepper on the palate.
The Grenache was cropped from an estimated 10-12 tons per acre to 4 tons per acre to improve the intensity of the flavor and the color. They were hand picked and delivered to Dan Kleck at his facility in Paso Robles in 2004, the year before we opened our own winery. We were very happy with the nose and the flavors of the Grenache all by itself. We added what we felt was the minimum amount of Syrah to add backbone to the wine without overpowering it.

At harvest, the picking of our Viognier was contracted by the hour, as opposed to by the ton. The grapes were laid gently into picking bins, resulting in minimal skin contact of the juice, a key element to preserving Viognier’s light and refreshing true fruit; the “lees” were stirred every week right up to bottling day to intensify the body. Another food-friendly wine, try our Viognier with Pacific Rim-influenced dishes, and grilled chicken or fish.
