2003 Fume Blanc Reserve “To Kalon Vineyard”
Regular $36.99 Wine Dinner $32.99
The medium-bodied 2003 Fume Blanc Reserve offers crisp, melony, mineral, and honeyed grapefruit characteristics with notions of white currants and flowers in the background. This cuvee is barrel fermented, with three-fourths of the juice aged in tank and the rest in wood prior to being blended. Approximately 8.5% Semillon was included in the final blend. A Loire Valley-styled white with loads of texture, aromatics, and flavor, it should drink well for 2-3 years. Robert Parker 91 points
2005 Chardonnay Carneros
Regular $19.88 Wine Dinner $$16.48
Fresh and focused, our 2004 Carneros Chardonnay brims with apple, pear and citrus fruit character. Floral, mineral and cinnamon nuances add complexity, while subtle oak tones linger in the background. The expansive flavors, balanced with a twist of lemon, culminate in long, fruit-imbued finish. The wine’s rich array of flavors comes from Chardonnay grapes grown in the windswept hills of the Los Carneros region, at the southern tips of Napa and Sonoma Valleys. Fermentation in French oak barrels, partial malolactic fermentation, and gentle stirring during sur lie aging enhanced the graceful style of this Chardonnay.
Varietal blend: 100% Chardonnay
2004 Pinot Noir Reserve
Regular $51.99
Wine Dinner $46.99 Winery Discount 41.99
The 2004 Pinot Noir Reserve comes from our finest vineyards with clonal selection, soils and climate that produce the most expressive, complex wines. We fermented more than a dozen different Pinot Noir clones with wild yeast to add layers of nuance to the wine’s opulent dark fruit character. Hints of rose, cedar and warm spice, influenced by clone and the unique terroir of Napa Valley’s Los Carneros region, weave through the aromas and flavors, then linger on the silky finish. Aging in toasted Burgundian oak barrels added soft vanilla nuances and integrated the supple tannins.
Varietal blend: 100% Pinot Noir
2003 Robert Mondavi Cabernet Sauvignon Reserve
Regular $125.67
Wine Dinner $98.99 Winery Discount $ 89.99
Our 2003 Cabernet Sauvignon Reserve boldly expresses our finest Napa Valley vineyards with deep, opulent black cherry and cassis character. Dark chocolate, sweet anise seed and aromatic bay leaf add complexity to the intense layers of sweet dark fruit. The wine combines power and elegance, with muscular tannins supporting the beautifully articulated Cabernet flavors. We handcrafted the wine in our To Kalon Fermentation Cellar with hand-sorting of the clusters, gravity-flow movement of the must and wine, and fermentation in a traditional oak tank. Aging in new French oak château barrels laced oak spices through the expansive, velvety flavors and lingering finish.
Varietal blend: 89% Cabernet Sauvignon, 11% Cabernet Franc
Reviews
”The rich and intense 2003 Cabernet Sauvignon Reserve has a saturated ruby/purple color and is sweet and dark, with a complex nose of creme de cassis, blackberry, subtle oak, and smoke. It is medium to full-bodied and seems richer, fuller, and more intense than the 2004, but again reminds me of a St.-Julien made in Napa”

“The 2003 Cabernet Sauvignon Reserve boasts a saturated ruby/purple color in addition to a sumptuous nose of graphite, blackberries, creme de cassis, cedar, and subtle toasty oak. Full-bodied with a seamless integration of acidity, wood, and tannin, this long, rich, impressively-endowed, stunning Cabernet will be even better with 2-3 years of bottle age, and should age for two decades.”
